On Saturday August 17th and again on Saturday October 19th, catch a class on salumi-making at ~KULETO’S~ with chef Bob Helstrom. You’ll get hands-on lessons on whole animal butchery and salumi-making, and you’ll get to take some salumi home at the end of the day too (I took the class a few months ago and learned a lot). On Wednesday September 18th, you can learn with two masters how to make two traditional moles.
