Some breaking news: the Inside Scoop reports Paul Canales is leaving OLIVETO after 15 years of working in the kitchen there. It’s reportedly an amicable departure. His last day will be this Saturday December 4th, and he reportedly has a solo project in the works. His replacement is Jonah Rhodehamel, “who has been a sous at places like La Folie, Zinnia and Americano.
